FIRE AND ICE PICKLES

I want to share the easiest and best pickle recipe you have ever tried! I got this recipe years ago from Southern Living magazine and kind of made it my own. They called them Fire and Ice Pickles.
First thing is buy the cheap store brand of dill pickles-make sure they are hamburger dills and NOT kosher dills.Drain pickles and put a layer in an empty jar. On top of this cover with sugar-continue this until all pickles are used. Add one chopped garlic clove and about 1/4 teaspoon red pepper flakes for this size jar. Cover and let sit on cabinet until sugar is melted-turning jar over and shaking several times during this time. Usually sugar will melt in an afternoon. Refrigerate after sugar has melted /dissolvedThe one on the left has been in fridge several days and the one on the right is almost ready-the sugar is dissolving and making juice. I don't know how this works, but these come out the crispiest sweet pickles you have ever had. You could omit the pepper flakes and garlic and they would still be delicious.I promise you if you try these, you will never buy another sweet pickle again. These make great hostess gifts too.

I didn't know about adding the red pepper flakes, but I've been making a similar pickle for years. Sometimes I make a gallon at the time. To a gallon of the drained pickles, I layer them with 5 pounds of sugar, 2 or 3 chopped cloves of garlic and some whole clove spices. These are wonderful pickles!! I may try adding the red pepper flakes next time!

Add me to the "clove contingent" for we're never without a big Tup of these in the fridge.

We've always called them "cheater pickles," for that was the name given me by the lady who served them at a fancy luncheon, and we all grabbed pens out of our purses.

And our "Fire" part was a couple of years ago when i added half a jar of jalapeno slices to a batch, and called them "Hotsy-Totsies."
The sweet hot rings of pepper in amongst the crispy pickles are deeelightful, so I can see how your pepper flakes would add the perfect touch.

The juice makes a wonderful addition sprinkled on chunks of chicken breast right before you make the chicken salad, or warm potato chunks, to absorb for a few minutes before you put in the other ingredients for potato salad.
